Tiramisu Muffins

You will need:

  • 500g pkt Betty Crocker® Triple Chocolate Muffins
  • 2/3 cup water
  • 1/3 cup vegetable oil
  • 2 eggs, lightly beaten
  • 3 teaspoons instant coffee, dissolved in 1 tablespoon hot water
  • 300ml thickened cream, whipped
  • chocolate coated coffee beans, to serve

Follow these basic steps

  1. Preheat oven for 10 minutes at 180°C/350°F (160°C fan-forced oven). Lightly grease a non-stick 12-cup regular (1/3 cup) muffin pan.
  2. Stir Muffin Mix, water, oil, eggs and coffee mixture together in a medium bowl for 2 minutes or until smooth and creamy. Spoon batter into muffin pan, filling each cup about 3/4 full.
  3. Bake for 15-20 minutes or until tops spring back when lightly touched in the centre. Cool in pan for 5 minutes, then remove and cool on a wire rack.
  4. Cut tops off cooled muffins at an angle. Spread bases with a little whipped cream. Replace tops, dollop with extra cream and serve with chocolate coated coffee beans.
