Spumoni Chunk Cookies

You will need:

  • 485g pkt Betty Crocker® Milk Chocolate Chunk Cookie Mix
  • 100g softened butter
  • 1 egg, lightly beaten
  • 1 cup dried cherries or craisins, coarsely chopped
  • 1 cup pistachio nuts, coarsely chopped

Follow these basic steps

  1. Pre-heat oven for 10 minutes at 180°C/ 350°F (160°C fan-forced oven).
  2. Stir Cookie Mix, butter, egg, cherries and pistachio nuts in a bowl until a soft dough forms (use your hands to fully mix the dough). Roll mixture into 15 balls .
  3. Place on non stick baking trays, spacing about 4cm apart. Flatten slightly. Bake one tray at a time for 8-10 minutes or until pale golden and just set. Remove from the oven and cool on trays for 2 minutes, transfer to wire rack and cool completely.
