Rocky Road Brownie

You will need:

  • 500g pkt Betty Crocker® Triple Chocolate Brownie Mix
  • 1/4 cup vegetable oil
  • 1 tablespoon water
  • 2 eggs, lightly beaten
  • 1/2 cup (80g) whole unsalted roasted peanuts, chopped
  • 50g packet glace cherries, chopped
  • 250g packet white and pink marshmallows, halved
  • 30g butter
  • 1 tablespoon milk
  • 100g white chocolate, melted

Follow these basic steps

  1. Preheat oven for 10 minutes at 180°C/350°F (160°C fan-forced oven). Grease a 27cm x 17cm x 3cm slice pan with oil or cooking spray. Line the base and sides with baking paper.
  2. Stir Brownie Mix, oil, water, and egg in a medium bowl until just combined. Do not use an electric mixer. Stir in peanuts and cherries. Spread evenly in pan. Bake for 25-30 minutes or until a skewer inserted near the centre comes out almost clean. Cool in pan for 15 minutes.
  3. Combine marshmallows, butter and milk in a small pan over low heat until marshmallows have melted. Stir in chocolate and pour over brownie. Chill for 1 hour or until set. Gently remove from pan, remove paper and cool on a wire rack. Trim edges with a sharp knife and cut into 16 rectangles.
