Flower Cupcakes

You will need:

  • 600g pkt Betty Crocker® Super Moist Vanilla Cake Mix
  • 3/4 cup water
  • 1/3 cup vegetable oil
  • 3 eggs, lightly beaten
  • 250g pkt white marshmallows
  • coloured sugar or coconut, to decorate
  • birthday candles, if desired

Follow these basic steps

  1. Preheat oven for 10 minutes at 200°C/400°F (180°C fan-forced oven). Line a standard 12-cup (1/3 cup) muffin tray with cupcake cases.
  2. Beat Cake Mix, water, oil and eggs in a large bowl with electric mixer on LOW speed for 30 seconds, then on MEDIUM speed for 2 minutes. Spoon mixture into muffin cases. Bake for 25 minutes or until tops spring back when touched lightly in the centre.
  3. Frost cupcakes with frosting. Using kitchen scissors, cut each marshmallow crosswise in half. Dip slices with colored sugar. Arrange 4-5 slices on each cupcakes in flower shape. Place candle in center of each flower.
