Choc Mixed Berry Scrolls

You will need:

  • 2 1/4 cups self-raising flour
  • 2 tablespoons caster sugar
  • pinch of salt
  • 30g butter, cubed
  • 1 cup milk
  • 1/3 cup strawberry or raspberry jam
  • 1 ½ cups frozen or fresh mixed berries
  • 485g tub Betty Crocker® Ready-to-Spread Chocolate Frosting

Follow these basic steps

  1. Preheat oven for 10 minutes at 200°C/400°C (180°C fan-forced oven). Line a baking tray with baking paper.
  2. Sift flour, sugar and salt into a bowl. Rub in butter until mixture resembles coarse breadcrumbs. Stir in enough milk to form a sticky dough. Knead on a lightly floured board until smooth. Roll dough into a 30 x 45cm rectangle, spread with jam and sprinkle with fruits. Roll up on the longest side, like a Swiss roll, to form a sausage.
  3. Slice roll into 3cm slices and place cut side up on trays. Bake for 10-15 minutes or until golden brown. Allow to cool and spread with Ready-to-Spread Chocolate Frosting.
