Apricot Slice

You will need:

  • Base
  • 600g Betty Crocker® Super Moist Vanilla Cake
  • 150g butter, melted

  • Topping
  • 800g can apricots, well drained & sliced
  • 200g sour cream
  • 1/3 cup caster sugar
  • 2 (59g) eggs
  • Ground cinnamon, for sprinkling

Follow these basic steps

  1. Preheat oven to 180°C / 160°C fan forced.
  2. Mix together vanilla cake mix & butter to form a soft dough. Press into lined 30cm x 20cm slice pan. Bake for 10-12 minutes.
  3. Spread apricots over base. Whisk together sour cream, sugar and eggs. Pour over apricots and sprinkle with cinnamon. Bake for 25-30 minutes. Cool in tray. Cut into squares when cold.
